Looking at the calendar, for the next 6 weeks or so, I can tell that holiday party time is upon us! Between work parties, preschool snacks, family and friend get-togethers, there are plenty of upcoming events to cook and bake for. It is super hard, at least it is for me, to maintain a very healthy diet. I love Christmas baking! And it just seems horribly wrong to go to parties and eat celery all night. So I’m trying to whip up some recipes that are somewhat healthy, if not super healthy alternatives to some of the things I usually would make for appys and desserts! I made these crackers today and they turned out great! They call for a fraction of the butter of a normal recipe, less salt, spelt flour instead of white flour…This is a majorly kid friendly recipe and takes about 3 minutes to prep!

Makes 2 dozen
1/4 cup butter, room temperature
2 cups shredded cheddar (the sharper the better)
1/2 cup spelt flour
1/4 tsp coarse sea salt
1/4 tsp red pepper flakes
Preheat oven to 350 and line a baking sheet with parchment paper. In a food processor, combine all ingredients and pulse until fully combined and starting to come together in a dough. Take tablespoon size balls of dough, roll them and then flatten them a bit on the baking sheet. Bake for about 15 minutes until they start to turn golden. It may seem as though they are soft and the butter is still shining, but as they cool they harden perfectly. Enjoy!
