Recipe: Granola Bars

Here is another quick and easy, kid-friendly, kitchen project! The fun thing about granola bars is you can make them with a variety of ingredients and get nice custom bars. You could use dried cherries and chocolate chips, pecans and coconut, peanuts and honey, the combinations are endless!

Here’s how you do it:

Preheat oven to 350. Line a baking sheet with parchment. In a bowl combine 2 cups of oats, 1 cup of nuts and/or seeds, 1 cup of coconut. Dump onto baking sheet. Bake for 10 minutes until starting to turn golden. Stir frequently.

In a small bowl, mix together about 1/2 cup of nut butter with 1/3 cup honey and 1 tsp of vanilla.

Remove oats from oven and reduce temp to 300. Pour oats back into large bowl. Add honey nut butter mix and stir to combine. Stir in any other things you want to add, such as dried fruit or chocolate chips. Press into a lightly greased 9×13 baking pan. The key is to really press press press. Bake for 25 minutes.

Allow granola bars to cool completely before attempting to cut or they will crumble apart.

This is a fun project to include kids in. Lots of stirring to be done! The batch I did today, shown above included 1 cup of puffed rice, 1 cup oats, 1 cup nuts and seeds: sunflower seeds, pecans and almonds, almond butter, and chopped dried apricots. Literally just a random blend of things in the pantry!

Tip: if you use gluten free oats, this is gluten free snack! It’s healthy and has protein, and can easily be made peanut free!
